Healthy recipe | Spicy stir-fried cauliflower florets with curcuma

Curcuma, ever heard of it? Seasoned kitchen princes and princesses no doubt! Curcuma, also called turmeric, is a yellow herb with a mildly bitter taste. It is extracted from the root of the curcuma longa plant, which belongs to the ginger family. In Eastern cuisine, curcuma is mainly used to give flavor and color to dishes. But it's also super healthy! It is not for nothing that curcuma and curcumin belong to the best and best-known herbs in supplements thanks to their very broad effect. It contributes to the maintenance of flexible muscles and joints and also supports the immune system and mental balance. Curcumin is the main active ingredient in turmeric.

Combine curcuma with black pepper

An easy-to-prepare side dish for four people. Curcuma is not easily absorbed into the blood, but in combination with some black pepper this problem is solved. Don't forget to grab that pepper mill! Incidentally, it is best not to eat curcuma raw, at least not too much and too often. So if you use the carrot, make sure you cook or bake it first. The well-known yellow curcuma powder has been dried and has undergone a heat treatment and is therefore not raw.

What do you need?

For 4 persons:

  • 1 cauliflower (medium size)
  • 1 piece ginger of about 3cm
  • 1/2 tsp curcuma (powder)
  • 1 red pepper
  • 2 tsp ground coriander seeds (ketoumbar)
  • 1 tsp ground cumin (Djinten)
  • 1 tbsp lemon juice
  • bunch of coriander
  • 1 tsp garam masala
  • 1 heaping scoop of coconut oil
  • Celtic sea salt to taste
  • black pepper, fresh from the mill

To work!

Divide the cauliflower into florets and steam them very briefly: they should not become soft, as they will fall apart and become mushy. Peel and grate the ginger. Cut the pepper in half lengthwise and remove the seeds. Then cut the pepper into small strips. Use gloves for this, otherwise you have to be careful not to rub your eyes for the next few hours! Melt the coconut oil in a heavy-bottomed pan, stirring continuously while heating the grated ginger with the curcuma. If the odors of the curcuma are released after a minute or 2, you can add the finely chopped pepper, the coriander and cumin seeds. Cook for a few more minutes, stirring constantly. Add the cauliflower and keep stirring. Bake this for about 5 minutes. Then add the lemon juice and the rest of the herbs and the salt and pepper to taste. Enjoy your meal!
