During the fermentation process, the garlic takes on a black color and a sweeter taste. Fermented garlic is high in antioxidants and important sulfur compounds such as S-Allyl cysteine.

What is S-Allyl Cysteine?

Fermenting ordinary garlic produces S-Allyl cysteine (SAC). An important sulfur compound, which among other things contributes to the anti-oxidative properties of black garlic. For example , black garlic supports blood pressure ^* , is good for the heart and blood vessels ^* and contributes to the maintenance of normal cholesterol levels in the blood ^* . But it doesn't stop there! Black garlic is soothing and relaxes at times of stress / tension ^* . And it is good for liver and bile function ^* .
